Lughnasadh Banana Bread


1 cup of sugar, or appropriate measured natural substitute like honey.
1 stick of butter
2 farm fresh eggs

3 ripe organic bananas
1 tbsp of local milk
1 tsp. Fresh ground Cinnamon
A few pinches of ground Cloves
A few pinches of your choice of other baking spices/nuts

2 cups of unbleached organic flour
1 tsp. Sea Salt
1tsp. Baking powder
1 tsp. Baking soda

Preheat oven to 325 degrees F.

Process the sugar and butter or mix until fluffy. Add eggs one at a time and incorporate them fully. In a seperate bowl, mash bananas with a fork and incorporate cinnamon, cloves, milk, and any other spices of your choice. Add to sugar mixture. Mix the flour, salt, baking soda& powder and add a little bit at a time to the sugared banana.

Butter a bread baking pan and fill with prepared bread batter.

Bake on 325 degrees F for about an hour or until you can stick a knife in and it comes out clean.

Enjoy with a Lammas themed tea and/or milk.
